1. Three pillars
In summer food is not stored, it is planned.
- A cold place — Ice, well or spring water and a cold pantry bridge hours, not weeks.
- Same-day processing — Milk becomes soured milk and cheese, surplus vegetables become preserves, and meat becomes a roast for one day or meat preserved in fat.
- Live stock — A chicken, rabbit, hen, goat or cow is the oldest "fridge". Meat and milk wait alive until they are needed.
- List first — Answer what you have: ice, a spring, a pantry below 18 °C, live stock and a freezer. Measure the temperatures of your places in July.
Why: A summer without a fridge is not a problem of cooling but of routine. The old homesteaders solved it with habits, and a cold place only bridged a few hours or a day.
- With all three pillars, summer passes without wasting food. With only one, you have to adapt the menu more.
- Ice gives 0–4 °C, a well or spring 8–14 °C, and a cold pantry 14–20 °C.
2. Milk does not wait
Milk arrives twice a day and spoils fastest.
- Cool it at once — After milking, strain it and cool it in the spring or with ice. Measure the temperature after 1 and 2 hours.
- Pasteurise by noon — 63 °C for 30 minutes or 72–75 °C for 1 minute, then cool it in water.
- Soured milk every day — In the late morning set soured milk or yoghurt, as much as gets eaten in a day or two.
- Surplus into cheese — In the afternoon the cheese goes into the mould. Make fresh cheese and cream only from pasteurised milk and eat them within 1–2 days; they are not for children, pregnant women or older people.
Why: Without a fridge milk is cooled within 2 hours, pasteurised and processed within 12–24 hours. Acid protects soured milk and yoghurt, and a maturing cheese keeps for months.
- Soured milk and yoghurt keep 2–3 days at 10–15 °C, and a day at 20–25 °C.
- From 10 L of milk you get roughly 1–1.5 kg of semi-hard or hard cheese, or cheese in brine.
